Grilled “Haloumi” Textured Salad

This mix of fresh and cooked veggies accompanied with crunchy wasabi peas and grilled “Haloumi” is the perfect textured salad that packs a punch in terms of flavour and diversity!

Great as a main meal as it is super filling and doesn’t disappoint!

Ingredients

Adjust Servings
1 Large Piece Dairy Free Haloumi
1 Handful Crunchy Wasabi Peas
2 Cups Iceberg Lettuce Shredded
1/4 Cup Carrots (Grated)
1 Cup Brussel Sprouts (Steamed)
1/4 Cup Bean Shoots
1/4 Cup Red Cabbage Shredded
1/2 Zucchini (Steamed)
3 Tbsp Lemon Juice
Pinch Salt & Pepper
Handful Snow Peas

Directions

1.

Cut zucchini and brussels into inch size pieces and steam until fully cooked
Grill haloumi on both sides with lemon juice until it is charred on both sides - set aside
Mark as complete
2.

Add lettuce, grated carrots, bean shoots, carrots, wasabi peas and snow peas into bowl
Mark as complete
3.

Toss through steamed zucchini and brussel sprouts and add lemon juice, salt and pepper to taste
Mark as complete
4.

Top with grilled haloumi and add an extra squeeze of lemon juice on top
Mark as complete
5.

Enjoy!
